Most of the processed, pasteurized honey is warmed/heated to reduce the moisture content of the honey, but studies have suggested that overheating the honey causes breakdown of natural sugar to 5-Hydroxy Methyl Furfural (HMF), which makes the honey unfit for human consumption.
Studies have also indicated that heating depletes natural pure honey of a portion of its characteristic vitamins, phytonutrients, catalysts, and other dietary components, thus making it unhealthy for consumption. The other reason for heating honey is that it does not get crystallised and there is a misconception amongst the general public that crystallised honey is adulterated or sugar is added, which is false. So crystallisation is a natural process of the honey.
Madhuvan’s™ Raw Honey is at risk of fermentation since it has not been pasteurized (i.e., heated). Madhuvan’s™ raw honey has not been pasteurized so it contains live naturally occurring yeast. Under certain natural phenomena, the yeast will grow leading to fermentation of some of the sugars, making more yeast, acetic acid, etc., all of which change the flavour of your honey over time.
We at Madhuvan™ recommend that the consumers store their honey in a cool place, and to only store at room temperature if they will consume it within 3 months or otherwise to refrigerate it. The honey presently in-use should be stored at room temperature. Please check your honey, and if it has crystallized or has developed white feathery patterns, as it starts to ferment, the honey should henceforth be refrigerated to stop the fermentation.
Please be noted that the honey is still good to consume, but if fermentation is allowed to continue, it will change the taste of honey.
